Cocktail鸡尾酒

提起鸡尾酒，你一定会想到欧美影片中常有的家宴场面。确实，它起源于西欧。至今已有上百年历史。鸡尾酒是一种由两种以上的酒加入冰块、香料或掺入鲜果汁配合成的饮料。它是餐前酒，其特点是凉，不论春夏秋冬，差不多都用碎冰块来调节温度。鸡尾酒都是现饮现配，不能贮藏，很适宜于家庭自制。1943年11月，在着名的德黑兰会议期间，美国总统罗斯福宴请斯大林和邱吉尔时，就亲自调配了晚餐前喝的鸡尾酒。他把大量的带甜味和不带甜味的苦艾酒倒进放有冰块的酒壶里，再加入一些杜松子酒，然后迅速把他们摇动搅匀，即成别有风味的鸡尾酒。

尽管国外的鸡尾酒配方多达500余种，但都有共同之处，一般都由三部分组成。一是酒，一般以蒸馏酒为主，如威士忌、伏特加、茅台等;二是副材料，如各种果汁、苏打水、牛奶、冰块等;三是点缀物，如柠檬、桔子、蜜瓜等。鸡尾酒可根据具体条件和爱好灵活变换三部分配料，使之在杯中五彩缤纷，芬芳四溢。

至于cocktail这个英文名称的来历，众说纷纭，究竟哪一种是它的真正来源，并未得到证实。不过，看看下面的种种传说，倒也挺有意思。

有人说，这种酒之所以叫cocktail，是因为当一个人喝了两、三杯后，就会感到自己象一匹竖起尾巴(with cocked tail)，将要对加比赛的马一样。

美国奥尔良市则宣称，cocktail是他们市的一位名叫Antoine Peychaud的酒吧间招待员发明的。他把这种饮料盛在一种叫coquetier杯形容器里。他们认为cocktail就是从这种容器的名字来的。

有的则说，一位阿兹台克(墨西哥印第安人)贵族要他的女儿Xochitl向皇帝敬献一种仙人掌汁液做的饮料。后来皇帝娶了这位姑娘，并且她的名字命名了这种饮料。

还有一种说法，英国过去有一种略有毒性的混合饲料，是用跑了汽的啤酒同杜松子酒、草药、面包、面粉混合制成，据说是让斗鸡食用的，好让它保持战备状态。除去面粉成份，人就可以饮用，这种饮料叫cock-bread ale或cockale，ale是啤酒，从而产生了cocktail。

还有一种更生动、更详细的传说，在美国纽约州，有一条赫德森河，河边有一家古老的酒店，店主人名叫William Van Eyck。店主人最心爱的东西有两样:一是他的斗鸡，名叫”闪电”，一是他的独生儿女，佩吉小姐。追求佩吉小姐的人都明白，要想得到她父亲的欢心，必须首先关必他的斗鸡。

向佩吉小姐求婚的大都是些以航海为业的殖民地居民，他们慷概大方，百般殷勤，并投其所好地向佩吉的父亲送一些令他满意的东西，然而这位美丽的佩吉小姐并不爱这些人，却一心爱着她家的一种祖传的饮料，没有什么比这种奇妙的饮料更能吸引她的，她一直小心翼翼地保存着饮料的秘方。

后来，佩吉小姐终于爱上了一个名叫阿普尔顿的青年，他是快速帆船上的大副。佩吉的父亲不大赞成这门亲事，在背地里暗暗地活动。姑娘为了让小伙子在严峻的考验面前鼓足勇气，在他前往拜见老人之前，为他调制了一杯这种饮料。正在这时，斗鸡”闪电”飞奔而出，在院子兜了个圈儿，一根尾巴上的羽毛被拌落下来，恰好落进酒杯里。姑娘高兴极了，拿它当了搅酒棒，激动地说:”鸡尾酒”!’闪电’给我们的酒取的名字!”他们俩双双为未来的美满幸福页杯起誓。

顺便说一下，用鸡尾酒举行的酒会叫”鸡尾酒会”，往往用于展览会开幕、轮船下水典礼、飞机试航仪式、工地开工剪彩或向宾客介绍某一要人等等。它的特点是简单、活泼、节约时间。鸡尾酒会在室内室外都可举行，没有台子，不设座位。如有要紧事，谈上几句，喝上几口，离开也可以。
