樱桃味OR潮州卤水味？ 翻译品酒术语的困惑

23岁的张阿兰就读于北京某大学的化学专业，从未吃过黑莓(blackberry)和覆盆子(raspberry)。因此，当葡萄酒培训师在解释一款葡萄酒的风味和香气时，他总是一脸茫然。

“很多用来描述葡萄酒风味的水果，我都没有吃过，”这个来自山东的小伙子说，“大多数品酒术语都是直接从英文翻译成中文，但我根本就不知道百香果(passion fruit)为何物。”

国际葡萄酒与烈酒研究所(International Wine and Spirits Research)最新调查发现：中国现在已成为世界第五大葡萄酒消费国和第六大葡萄酒生产国。但对于葡萄酒各方面的描述，中国人依旧感到迷茫。

《醇鉴》杂志(去年九月份发布了中文版)的编辑约翰·阿尔伯特(John Abbott)说：“把品酒术语从英文翻译成中文是一件很痛苦的事情。”阿尔伯特称，他和他的中国译员曾就“savory”一词的翻译就争吵了两个多小时。这是因为“savory”经常用来描述罗讷河谷葡萄酒或陈年的波尔多葡萄酒。当“savory”用来描述罗讷河谷葡萄酒时，是指葡萄酒带有些许橄榄和药草的气味；而当用来修饰波尔多葡萄酒时，通常是指葡萄酒带有皮革味，风味凝练，耐咀嚼。

“他们老是强调：如果葡萄酒‘不甜(not sweet)’，就可以把它翻译成‘带咸味的(salty)’，”阿尔伯特说，“但我们不这么认为。可当我们翻出别人的译文时，发现还是没有人能解决文化差异造成的词语空缺问题。不甜又不咸的东西又该叫什么呢？中文里没有这一术语的表达。”

佳士得拍卖会中国分会的负责人谭业明(Simon Tam)说，他的团队已经停止翻译伦敦和纽约酒评家写的品酒笔记，因为在这些品酒笔记中，欧洲水果名和花朵名随处可见，但这些在亚洲是不常见的，如红醋栗(black currant)、覆盆子(raspberry)和蔓越橘(cranberry)。“如果我向一名中国人说黑皮诺(Pinot Noir)带有醋栗(gooseberry)的香气，他们完全不懂这是一种什么样的香气。”谭业明说道。

你说樱桃味，我说潮州卤水味

那么怎样描述带有外国文化特征的异域风味呢？谭业明写了两份关于2002年份的罗曼尼·康帝大依瑟索园干红葡萄酒(Domaine de la Romanée-Conti, Grands-Echezeaux)的品酒笔记。一份是针对外国读者，另一份则是针对中国读者。让我们来比较一下这两篇品酒笔记的不同。

英文品酒笔记篇：

此款酒中黑皮诺葡萄的香气甜美纯正而又经典，并伴有些许花朵、湿土、樱桃(cherries)和覆盆子(raspberry)的香气，甚至带有些许野味肉的气味。酒力强劲，香气含蓄，发展较为迟缓，风味凝练，但依旧需要一段时间熟成才能达到最佳状态。

中文品酒笔记篇：

此款酒带有红枣、中药和潮汕卤水的香气，口感甜润，果味浓郁，余味悠长，并带有些许当归的甜味。如想品味其果香，现在即可饮用，不过也可以再熟成20-30年。最好与酥脆的烤猪肉搭配佐餐。

从中文品酒笔记中可以看出，谭先生并没有使用英语词汇来描写风味，而是用了中药当中的“当归”一词来描述陈年的波尔多葡萄酒中的泥土味。同时，他还用煲汤常用的“红枣”来描述年轻的波尔多葡萄酒的香气。此外，发酵的卷心菜和荔枝味在品酒笔记中也越来越常见。

在中国葡萄酒界内，不仅关于风味的外来词汇生涩难懂，在葡萄品种的命名上，很多葡萄酒专家的意见也不能达成一致。

定居于北京的葡萄酒教育家赵凤仪(Fongyee Walker)与6位中国酿酒专家一道参加了在新西兰举行的葡萄酒会议。会上，还没来得及讨论当地葡萄酒的相关事宜，与会成员很快就“Merlot”这个葡萄品种的中文译名发生了争执。

会上至少出现了两种译名。第一种，由于“Merlot”第一个音节像中文中的“美”的发音，由此得出“美乐”的译名。此外，由于第一个音节也像中文中的“梅”，因此得出“梅洛”的译名。

“关于‘Merlot’葡萄的译名就争论了20多分钟”，赵女士说。赵女士出生于英国，在剑桥大学取得了中国文学博士学位，现今在为全球最大的葡萄酒教育机构——葡萄酒与烈酒教育基金会(Wine & Spirit Education Trust)翻译中文版的教材。中国葡萄种植协会(Chinese Society of Viticulturists)已经列出了一系列外国葡萄的中文译名，不过这些译名依旧没有得到全国认可和采用。

零散的中国葡萄酒市场使得译名变得更加复杂。中国有成千上万家进口商。尽管这些进口商通常进口一样的葡萄酒，但各自都使用自己翻译的酒名作为注册商标，这迫使其他进口商使用另外一个截然不同的译名作为注册商标。

《醇鉴》编辑阿尔伯特说，葡萄酒术语翻译可能成为中国葡萄酒界中的“政治问题”。“中国目前还没有一本专业的中文葡萄酒字典，”他说，“我们正努力使各方达成共识。”

在涉及到著名葡萄酒商的译名时，争论通常会公开化。佳士得拍卖会也曾尝试着使波尔多列级名庄的中文名标准化，他们曾制作了一张海报，上面标有62家波尔多列级名庄的英文名和相应的中文译名。

但是这些酒庄拒绝接受佳士得的中文译名，并呼吁抵制这种海报。

而在北京，像张先生这样的消费者依旧对葡萄酒专家口中所谓的“黑色李子味(dark plum)感到十分困惑。”对于这样的消费者，赵女士称，有时普通的中国超市是训练他们味蕾的最好场所。

“当葡萄酒中出现新的果味或酸奶的风味时，我要感谢上帝，”她说，“因为这意味着人们对葡萄酒的风味又有了新的理解。”
